When I think Christmas, or the Holidays, I always imagine lazing indoors in cozy sweaters and socks, with a large mug of marshmallow hot chocolate in hand. There's really nothing as satisfying as sweet, ooey gooey marshmallows melting away into a bath of hot chocolate. For this holiday season, I've created a homemade, snowflake peppermint marshmallows recipe.

My recipe creates soft, pillowy marshmallows that are peppermint flavored, shaped like snowflakes, and colored to look like pink marble. And if this wasn't already enough, I topped the marshmallows with crushed candy canes for even more pizzaz.Talk about an elevated marshmallow!

These are the most delectable, and festive hot chocolate toppers. It's so easy and fun to make, not to mention tastes way better than the store bought version. My snowflake peppermint marshmallows are perfect to make at home with your loved ones, and also make the cutest stocking stuffers or holiday party favors. I'm so excited for you to give them a try!

Happy Holidays!

DIFFICULTY LEVEL:Easy Peasy

PREP & DECORATION TIME:30 Minutes SET TIME: 2+ Hours TOTAL TIME:2 Hours 30 Minutes

QUANTITY:15-20, 2-Inch Snowflake Marshmallows (dependant on snowflake cutter size)

INGREDIENTS:

  • Cooking Spray or Butter or Oil (For greasing)
  • 2/3 Cup Water
  • 3 (1/4 ounce) Packets Unflavored Gelatin
  • 1 Cup Granulated Sugar
  • 1 Cup Light Corn Syrup
  • 1/2 Cup Powdered Sugar
  • 1 Teaspoon Peppermint Extract
  • 1/4 Teaspoon Salt
  • Red Food Coloring
  • Crushed Candy Canes (For garnish)

TOOLS:

  1. To create the marshmallows:
    • Grease the baking sheet and generously dust powdered sugar over the top. Set aside.
    • In a mixing bowl, sprinkle the gelatin powder packets over 1/3 cups of water. Let it soften, and set aside.
    • In a medium saucepan, combine 1/3 cups water, 1 cup granulated sugar, 1 cup light corn syrup, and 1/4 teaspoon salt. Bring to a boil over medium-high heat for about a minute, and then turn off.
    • Take the saucepan mixture and slowly pour into the mixing bowl with gelatin while blending on the lowest speed. Slowly increase the speed to high for about ten minutes. The mixture should go from clear to white, and get increasingly thick and sticky.
    • Add 1 teaspoon of peppermint extract and mix for another minute.
    • Randomly add drops of red food coloring and mix just a few times to create red swirls throughout the marshmallow mix.
    • Wet your hands to minimize sticking, and pour the mix into the baking sheet, creating a rectangular shape.
    • Sprinkle the crushed candy canes all over the top of the marshmallow.
    • Set aside pan for at least two hours.
  2. To create the snowflakes: Wet or oil the snowflake cookie cutters, then press into the marshmallow to create your snowflakes. Wet and clean off your cutters periodically to insure the best possible shapes. Toss the marshmallows with the rest of the powdered sugar to keep them from sticking to each other.
  3. To Serve:
    • Place 1 or 2 snowflake marshmallows on top of your favorite hot chocolate to enjoy immediately. You can even stick the marshmallows on little cake pop sticks if you want to dip them into your hot chocolate.
    • For gifts, package the marshmallows into plastic gift bags as stocking stuffers or holiday party favors. They make a great gift!

Vegan Thai Pad Ka Prao Lettuce Wraps

One of my favorite foods from Thailand is a popular street food called pad ka prao. It's a simple but delicious dish of stir fried ground meat (usually pork or chicken) with Thai basil, and served over rice and a fried egg. I was super inspired by my trip to Thailand, that I wanted to recreate this amazing dish into a healthy vegan version!
