Little flower pot cakes are a fun and tasty dessert idea for spring or Easter. Made with your favourite chocolate cake, then topped with frosting, crumbs, fresh berries, mint and flowers. So adorable!

Hello friends. I hope you’re holding up well given the circ*mstances. Thankfully, I’ve made several changes to my daily routine over the past year that continue to help through this challenging time. Perhaps I’ll get around to sharing my personal list in an upcoming post. For now, I thought I’d focus on what I consider to be one of the most important. Do you do something every day that sparks joy?

I have many interests, but over time I’ve come to realize that being creative is essential to my well-being. One of my favourite ways to fulfill this need lately is baking. Apparently there are many people stress-baking. Do you find it therapeutic too?

With Easter coming up, I thought it would be fun to share my latest baking project, Spring Flower Pot Cakes.

I must note that I was inspired to make these spring desserts while writing my last post, Put Your Small Plant Pots to Use. Although the technique and recipe I used is different than these flower pot cupcakes, the overall look is similar. I encourage you to put your own spin on these treats using what you have on hand.

How to Make Individual Flower Pot Cakes

Supplies and Ingredients

  • 7 small untreated, unglazed terracotta pots (about 3″), thoroughly washed and dried
  • boxed chocolate cake mix (for 9×13 pan), or favourite chocolate cake recipe- I used this gluten-free mix
  • chocolate frosting (recipe below)
  • chocolate wafer or cookie crumbs
  • fresh mint, berries and flowers (edible or faux)

Flower Pot Cake Instructions

  1. Prepare terracotta pots, cake and frosting according to recipe below.
  2. Using knife or back of spoon, evenly spread frosting over top of each cake.
  3. Sprinkle with chocolate crumbs.
  4. Decorate each pot with fresh berries, mint and edible or faux flowers.

Flower Pot Cake Tips

  • Chocolate wafer or cookie crumbs can be made by crushing in bag with rolling pin or running them through the food processor. I used gluten-free double chocolate cookies.
  • For dietary restrictions, modify ingredients as necessary. I used this gluten-free chocolate cake mix. You can also substitute the chocolate frosting with your own dairy-free version.

Spring Cake Decorating Ideas

Be creative with your decorating. As you can see, I added faux daffodils for an Easter look. You could also use edible flowers, such as pansies, cornflowers, daisies, marigolds or others. Check to make sure they’re a culinary variety.

I also like the idea of using butterflies, tiny bees or ladybugs (edible or faux). Fun, right?!

Adding a garden marker would be fitting too. The possibilities are endless!

Cake Display Ideas

For Easter or a spring celebration, serve these little plant pot cakes grouped together in a tray. For larger groups, you could use a tiered tray or plant stand. I also suggest placing these mini shovel spoons beside. How cute would that be?!

I used a little crinkle paper as filler. It’s also an easy way to transport them (once we’re able to have gatherings again).

And on that note, for a hostess gift or garden-lover, this wire tray basket is perfect. The pots can be used to plant seeds in once the desserts are eaten. Fun, right?

Spring Flower Pot Cakes

Individual flower pot cakes made with your favourite chocolate cake, then topped with frosting, crumbs, fresh berries, mint and flowers. A fun and tasty dessert idea for Spring or Easter.

Cook Time 40 minutes minutes

Total Time 1 hour hour 15 minutes minutes

Serving Size 7

Ingredients

For the cake

  • 1 tablespoon vegetable oil
  • 2 tablespoons cocoa powder
  • 1 box chocolate cake mix + required ingredients (or favourite chocolate cake recipe) for 9×13 cake

For the chocolate frosting

  • 7 tablespoons whipping cream
  • 6 tablespoons honey
  • pinch sea salt
  • 3 ounces unsweetened chocolate, finely chopped
  • ½ cup unsalted butter, cubed
  • 6 tablespoons confectioner's sugar

To assemble pots

  • cup chocolate wafer crumbs
  • fresh mint sprigs
  • strawberries
  • blackberries
  • edible or faux spring flowers

Instructions

For the cake

  • Lightly brush inside of each flower pot with oil (being careful not to get on outside). Line bottom with parchment paper round (slightly larger than circumference). Brush parchment with a bit more oil, then lightly dust with cocoa (tapping excess out).

  • Preheat oven to 350°F. Prepare chocolate cake mix (or your favourite chocolate cake recipe) according to directions.

  • Fill each pot ⅔ full, wipe any drips from outside, then place on parchment-lined baking sheet. Optional- wrap bottoms tightly with aluminum foil to prevent leaking (I did this as a precaution but had no problems).

  • Bake for 40-45 minutes, or until toothpick inserted into center comes out clean. (Baking time will vary with dimension of pots and cake ingredients). Allow cakes to completely cool on wire rack.

For the chocolate frosting

  • Place chocolate in medium mixing bowl and set aside.

  • Add cream, honey and salt to a small saucepan over medium heat. Whisk and bring just to a boil. Remove from heat and pour over chocolate, whisking continually to combine.

  • Whisk in butter, one cube at a time until smooth and incorporated. Cool slightly, stir, then place in fridge.

  • Once completely cooled, beat mixture with hand mixer for about 30 seconds to fluff up. Gradually beat in confectioner's sugar until smooth.

To assemble pots

  • Using knife or back of spoon, evenly spread frosting over top of each cake (there will be extra). Sprinkle with chocolate wafer crumbs.

  • Top each pot with fresh fruit and mint. Be creative with your decorating. I added faux daffodils for an Easter look. You could also use edible flowers, such as pansies, cornflowers, daisies, marigolds or others.
